Grandma Ellison dinner rolls recipe
After publishing our Thanksgiving video, I got a few requests for the Grandma rolls recipe. Here it is! For the years ahead, I won't have to wake up Ryan's mom at 5 AM to get the recipe anymore :)Ingredients
- 2 packages dry yeast (1 package = 7 g)
- 1/4 cup warm water ("finger" warm)
- 1 Cup Milk
- 1/4 Cup Butter
- 1/2 Cup Sugar
- 1 Teaspoon Salt
- 2 Beaten eggs
- 5 Cups flour
- 3/4 Cup of soft Butter
- 2 egg yolks & 1/2 of a cup of water for the egg wash
Preheat your oven at 375 F or 190 C.Scald the milk, and pour it in a big bowl. Add 1/4 Cup butter to the milk, add sugar, stir until the butter has melt. Let sit until the mix is lukewarm. Add enough flour to make a thick batter and the beaten eggs.In the meantime, soften the yeast in 1/4 cup warm water until it gets bubbly.Add the yeast to the milk mix, and stir until the yeast is well incorporated.Add 4 Cups of flour, or until the dough is thick, detaches from the bowl but still sticks to the finger. Turn out the dough on a lightly floured oared and let rest for 10-15 minutes.Add flour little by little until the dough is smooth, satiny, and only lightly stick to the fingers.Place in a greased bowl, cover and let rest until the dough has doubled in size (usually around an hour). When ready, punch down the dough, and divide it into 4 equals dough balls.Create circles with a pastry roll, and divide them into 8 equal triangles. Brush a layer of softened butter (room temperature but almost liquid) on each triangle before shaping the rolls. Place the rolls on a baking sheet (or on a double baking sheet or insulated sheet for boat galley bakers!), cover and let rise for 10-15 minutes, then brush them with the egg wash, bake for 12-15 minutes or until golden brown.Et voila! :)
